SEASONAL RESTAURANT / KITCHEN MANAGER

REPORTS TO: General Manager of Restaurant and Culinary Services
SEASONAL OR NON-SEASONAL: Seasonal and Non-Benefited
FLSA STATUS: Hourly, Non-Exempt
POSITION SUMMARY: Responsible for the day-to-day operations of restaurants, catering and events.
POSITION REQUIREMENTS:
Demonstrated experience in food or culinary service with success in leading and motivating staff to attain success.
Must be knowledgeable in the recreation business and able to work with diverse groups of people (guests, staff, volunteers and vendors).
Excellent communication and leadership skills.
Ability to motivate, coach, mentor and develop staff.
Must have a thorough understanding and demonstrated success of alcohol sales and state serving laws.
Must be able to assist in planning and executing catering events of all sizes and menus.
Must have a demonstrated knowledge of building recipes, the ordering process, and inventory control.
Must be detailed oriented and is responsible for a strict standard of cleanliness.
Knowledge of Microsoft Office, POS systems, and ability to learn other software platforms.
ESSENTIAL FUNCTIONS AND RESPONSIBILITIES:
Hire, train, supervise and mentor kitchen staff.
Provides a hands-on leadership approach to ensure the standards of Binder Park Zoo are met.
Knowledge of point of sale systems (i.
e.
TAM).
Responsible for the procurement of all products related to restaurants/concessions.
Responsible for maintaining par levels of product at all locations using effective food storage and rotation principles.
Responsible for the creation and implementation of a quality management system and monitors food safety.
Assists the General Manager of Food and Culinary Services with:
Design and implementation of menus and pricing
Design and implementation of catering plans, menus, sales and implementation
Ensures staff follows safety and health regulations according to state law.
Investigates all guest comments and takes swift, decisive, and positive actions to rectify problems and reward quality service.
Keeps operating manuals up-to-date for all locations.
Runs hands-on shifts during volume periods.
OTHER DUTIES AND RESPONSIBILITIES:
Assist in creating procedures and training manuals for all areas within the department.
Comply with all Binder Park Zoo policies and procedures.
Participates and assists in team oriented zoo projects as needed including all events.
Member of committees as needed.
Other duties as assigned.
Must be 18 years of age and possess a valid driver’s license.
SUPERVISORY RESPONSIBILITIES: The role is responsible for the overall direction, coordination and evaluation of direct reports and for carrying out supervisory responsibilities in accordance with the organization’s policies and applicable laws.
PHYSICAL AND ENVIRONMENTAL DEMANDS:
Ability to work a flexible schedule including evenings, weekends and holidays.
Ability to sit, stand, bend, lift and move intermittently.
Ability to lift 50 lbs.
and ability to stand for a period of up to 5 hours.
Ability to read, speak and write English in order to fulfill job functions in an understandable way.
Ability to work in all weather conditions.
